Pro Tips for Perfect Results

To guarantee your soup turns out perfectly every time, consider these expert tips:

  • Gentle Cooking: Always cook the chicken over low heat to keep it juicy and tender.
  • Texture Matters: For a creamier texture, ensure the cream cheese is at room temperature before adding it to the soup.
  • Flavor Boost: Let the soup simmer longer for enhanced flavors—just avoid boiling it vigorously.
  • Spice Control: Taste as you go! Adjust the heat level with additional hot sauce or jalapeños.
  • Fresh Herbs: Add fresh cilantro or parsley as a garnish for a pop of color and flavor.
  • Cheese Variations: Mix in Monterey Jack or pepper jack cheese for a different flavor profile.
  • Garnish Wisely: Top your soup with crispy tortilla strips, avocado slices, or a dollop of sour cream for added texture.
  • Utilize Leftovers: If you have leftover chicken from another meal, this is a perfect way to use it up!

Common Mistakes and Troubleshooting

Even the best chefs can make mistakes. Here’s how to avoid some common pitfalls:

  • Overcooked Chicken: Be mindful of cooking times; overcooked chicken can become dry. Use a meat thermometer to check for doneness (165°F/75°C).
  • Too Thick? Too Thin?: If your soup is too thick, add more chicken broth. If it’s too thin, let it simmer uncovered for a while to reduce.
  • Unbalanced Flavors: If the soup tastes bland, consider adding more salt, pepper, or taco seasoning to enhance the flavor.
  • Curdled Cheese: Avoid adding cheese too quickly or at high temperatures to prevent it from curdling.

Variations to Try

Feel free to experiment! Here are some delightful variations of this recipe:

  • Vegetarian Option: Replace chicken with extra beans or roasted vegetables and use vegetable broth instead.
  • Spicy Kick: Add diced chipotle peppers in adobo for a smoky heat.
  • Cheesy Version: Increase the amount of cheese for an ultra-creamy soup, or use a cheese blend.
  • Crock Pot Method: Combine all ingredients (except cheese) in a slow cooker and cook on low for 6-8 hours. Add cheese just before serving.

Storage and Make-Ahead Instructions

This soup is perfect for meal prep! Here’s how to store and reheat:

  • Refrigeration: Store leftovers in an airtight container in the fridge for up to 3 days.
  • Freezing: Allow the soup to cool completely, then freeze in portions for up to 3 months. Thaw overnight in the fridge before reheating.
  • Reheating: Reheat gently on the stove over low heat, adding a splash of broth or water to reach the desired consistency.

  • 1 tablespoon pumpkin pie spice: A blend of warm spices that enhances the pumpkin flavor.
  • 1 cup butter (2 sticks, melted): Adds richness; can substitute with vegetable oil or applesauce for a lighter version.
  • 1 (15-oz) can pumpkin puree: Not pumpkin pie filling; provides moisture and flavor.
  • 4 large eggs: Essential for structure; can substitute with flax eggs for a vegan version.
  • 1/4 cup vegetable oil: Keeps the cake moist; can use light-flavored olive oil.
  • 1 tablespoon vanilla extract: Enhances all the flavors.
  • 3 tablespoons milk: Adjust for desired consistency of icing.
  • 2 cups powdered sugar: For the icing; feel free to reduce the amount for a less sweet topping.

Step-by-Step Instructions

Now, let’s get into the heart of the baking process. Follow these steps to create your Pumpkin Coffee Cake:

  • Preheat your oven: Set it to 350 degrees F. Grease a 9×13 inch cake pan with nonstick spray or butter.
  • Make the streusel: In a large bowl, whisk together 3 cups of flour, 1 cup of brown sugar, 1/2 cup of granulated sugar, 1 teaspoon of kosher salt, 1 tablespoon of cinnamon, and 1 tablespoon of pumpkin pie spice.
  • Melt the butter: In a medium bowl, melt 1 cup of butter in the microwave. Pour it into the larger bowl with the dry ingredients and mix until crumbly, resembling wet sand.
  • Prepare the cake batter: In another bowl, combine 2 and 1/4 cups of flour, 1 and 1/2 cups of granulated sugar, 1 tablespoon of baking powder, 3/4 teaspoon of baking soda, 3/4 teaspoon of kosher salt, 1 tablespoon of pumpkin pie spice, and 1 teaspoon of cinnamon. Add chopped butter and blend until crumbly.
  • Add pumpkin puree: Incorporate half the can of pumpkin puree into the flour mixture using a mixer.
  • Mix the wet ingredients: In the bowl used for the butter, whisk together the remaining pumpkin, 4 eggs, 1/4 cup of vegetable oil, and 1 tablespoon of vanilla.
  • Combine mixtures: Gradually add the wet mixture to the flour mixture, beating well until fluffy.
  • Layer the cake: Spread 2 cups of batter in the prepared pan, sprinkle 1 cup of streusel on top, then add another 2 cups of batter and another cup of streusel. Top with the remaining batter and streusel.
  • Bake: Bake for 35 minutes. Quickly sprinkle any leftover streusel on top, then continue baking for an additional 10-15 minutes until a toothpick comes out clean.
  • Cool and ice: Let the cake cool for 15-20 minutes before icing with your prepared mixture of butter, powdered sugar, milk, and vanilla.

Here are some expert insights to ensure your baking is a success:

  • 1-2 cups shredded Rotisserie chicken or poached chicken (great for protein)
  • 1 large sweet potato, diced into ½-inch cubes

  • 1 large apple, diced into ½-inch cubes (adds sweetness and crunch)

For the maple cinnamon vinaigrette:

  • ½ cup extra virgin olive oil

Steps for Crafting Your Autumn Grain Bowls

A close-up side view of a colorful autumn grain bowl featuring wild rice, quinoa, sweet potato, chicken, and greens.

Follow these simple steps to create your bowls:

  1. Preheat the oven to 425°F (220°C). Cook the wild rice and quinoa according to package directions. Line a large baking sheet with parchment paper and set aside.
  2. Place the diced sweet potatoes on the prepared baking sheet. Drizzle with olive oil and season with chili powder, cumin, cinnamon, and kosher salt. Toss to combine. Roast for 20-25 minutes, until the sweet potatoes are fork-tender and crispy around the edges. Remove from the oven and set aside.
  3. While the sweet potatoes roast, prepare the maple cinnamon vinaigrette. Blend olive oil, balsamic vinegar, maple syrup, garlic, cinnamon, kosher salt, and black pepper in a blender or food processor until emulsified and creamy, about 30 seconds. Transfer to a jar or airtight container and mix in fresh herbs. Store in the refrigerator for up to 2 weeks.
  4. As the sweet potatoes roast, prep the remaining grain bowl ingredients: shred the kale, finely dice the red onion, dice the apple, shred the cheese, and chop the nuts.
  5. In a large bowl, massage the shredded kale with a drizzle of vinaigrette until it’s vibrantly green and softened. Add the cooked wild rice, quinoa, roasted sweet potatoes, shredded chicken, red onion, apple, cheese, and walnuts. Drizzle more vinaigrette over the top and toss to combine.
  6. Serve warm, at room temperature, or cold. Enjoy your nourishing autumn grain bowls!

Pro Tips for Perfect Grain Bowls

For the best results, keep these expert tips in mind:

  • Cooking Grains: Ensure your wild rice and quinoa are perfectly cooked. Follow package instructions for time and ratios to avoid mushy grains.
  • Roasting Sweet Potatoes: Cut sweet potatoes into uniform pieces for even roasting. Toss them halfway through for a nice caramelization.
  • Massaging Kale: This step not only makes kale more palatable but also enhances its color and flavor. Use your hands to really work the vinaigrette into the leaves.
  • Ingredient Variations: Feel free to switch up the grains or proteins based on your preferences. Brown rice, farro, or chickpeas can be great alternatives.
  • Vinaigrette Storage: Make a double batch of the vinaigrette to have on hand for salads and other dishes throughout the week.
  • Adding Spice: If you enjoy a bit of heat, consider adding red pepper flakes or a dash of hot sauce to the vinaigrette.
  • Texture Balance: Mix in crunchy elements like seeds or crispy chickpeas for added texture.
  • Fresh Herbs: Don’t skip the herbs! They elevate the dish’s flavor and add a burst of freshness.

Common Mistakes and Troubleshooting

Even the best home cooks can encounter hiccups. Here are common mistakes and how to avoid them:

  • Overcooking Grains: Keep an eye on your cooking times. Overcooked grains can turn mushy and lose their texture.
  • Underseasoned Vegetables: Don’t be shy with seasoning! Properly seasoning your sweet potatoes will enhance their natural sweetness and flavor.
  • Skipping the Vinaigrette: The vinaigrette ties the whole dish together. Ensure you drizzle enough over the assembled bowls.
  • Not Massaging Kale: If you skip this step, the kale can be tough and unappealing. Take the time to massage it for better flavor and texture.

Delicious Variations to Try

While the classic recipe is delightful, consider these fun variations:

  • Quinoa and Black Bean Bowl: Substitute quinoa with black beans for a protein-packed vegetarian option.
  • Roasted Beet and Goat Cheese Bowl: Swap out sweet potatoes for roasted beets and add crumbled goat cheese for a tangy twist.
  • Asian-Inspired Bowl: Use sesame oil instead of olive oil, and add soy sauce, edamame, and shredded carrots for an Asian flair.
  • Fruit-Forward Bowl: Incorporate seasonal fruits like pears or pomegranate seeds for a sweet contrast to the savory elements.

Storage and Make-Ahead Instructions

These grain bowls are perfect for meal prep!

  • Refrigeration: Store assembled bowls in an airtight container in the fridge for up to 4 days.
  • Freezing: You can freeze the grain mixture (wild rice and quinoa) separately from the other components for up to 3 months.
  • Reheating: Reheat in the microwave or on the stove, adding a splash of water or extra vinaigrette to revive the flavors.
  • Assemble Fresh: For the best texture and flavor, consider assembling the bowls just before serving, especially if using components that wilt easily.

  1. Prep the oven and baking sheet: Preheat your oven to 300°F (150°C). Line a half sheet pan (18 x 13 inches) with parchment paper and set aside.
  2. Heat the wet ingredients: In a small saucepan, combine the maple syrup, coconut oil, sea salt, cinnamon, and vanilla extract. Heat over medium heat for 4-5 minutes until the mixture is warm and the coconut oil is fully melted. Remove from heat.
  3. Add the dry ingredients: In a large mixing bowl, combine the oats, almonds, coconut flakes, pecans, and sunflower seeds. Drizzle the warm maple syrup mixture over the dry ingredients and gently toss until evenly combined.
  4. Bake: Spread the granola evenly on the prepared sheet pan. Press it down gently with a spatula. Bake for 25 minutes, then rotate the pan 180° without stirring. Bake for an additional 15-20 minutes until lightly golden. Remove from the oven and let it cool completely; it will harden as it cools.
  5. Serve: Once cooled, break the granola into chunky clusters. Enjoy immediately or store for later!

Now that we have our ingredients ready, let’s get to the heart of the matter – how to prepare this delicious chili!

Step-by-Step Instructions

  1. Sauté the aromatics: In a large pot over medium heat, add the avocado oil. Once hot, add the chopped yellow onion and sauté until translucent, about 5 minutes. Stir in the chili powder, cumin, cinnamon, cayenne, and nutmeg, cooking for an additional minute until fragrant.
  2. Add the veggies: Stir in the zucchini and continue to cook for another 3 minutes, allowing them to soften.
  3. Incorporate the pumpkin: Add the pumpkin puree and canned tomatoes to the pot, stirring well to combine all ingredients.
  4. Add the chicken: Place the chicken thighs into the pot and pour in the chicken broth. Bring the mixture to a gentle simmer.
  5. Cook: Cover the pot and let the chili simmer for 25-30 minutes, or until the chicken is cooked through and tender.
  6. Shred the chicken: Remove the chicken thighs from the pot, shred them using two forks, and return the shredded chicken to the pot. Stir well to combine.
  7. Adjust seasoning: Taste the chili and add salt or additional spices as needed. Simmer for an additional 5 minutes to allow the flavors to meld.
  8. Serve and enjoy: Ladle the chili into bowls and serve hot with your favorite toppings!

Pro Tips for the Best Pumpkin Chicken Chili

  • Choosing the right chicken: Opt for chicken thighs over breasts for a juicier texture. If using breasts, be cautious not to overcook them.
  • Enhance the flavor: Add a splash of apple cider vinegar or lemon juice at the end for a bright finish that lifts the flavors.
  • Layer your spices: Consider adding spices gradually and tasting as you go, allowing for a more balanced flavor.
  • Chili thickness: If your chili is too thick, add more broth or water to achieve desired consistency.
  • Cook with love: Allowing the chili to simmer longer enhances the flavors. If time permits, let it sit on low heat for an hour.
  • Storage tips: Cool completely before storing in airtight containers. This chili keeps well in the fridge for up to a week.
  • Freezing advice: Portion out your chili into freezer-safe containers for easy meal prep. It can be frozen for up to 3 months.
  • Experiment with toppings: Try topping your chili with Greek yogurt, shredded cheese, or fresh herbs for added flavor.

Common Mistakes and Troubleshooting

Even the best recipes can have hiccups! Here are some common mistakes and how to avoid them:

  • Overcooked chicken: If your chicken is dry, it’s likely overcooked. Keep an eye on the cooking time and use a meat thermometer to ensure it’s cooked to 165°F (75°C).
  • Too spicy: If you accidentally added too much heat, balance it out with a little sugar or honey to mellow the flavors.
  • Bland flavor: Always taste your dish and adjust seasonings. A squeeze of lime or a sprinkle of salt can make a significant difference.
  • Too thick: Add more broth or water to thin it out. If it’s too thin, let it simmer uncovered to reduce the liquid.

Feel free to mix things up! Here are some exciting variations of pumpkin chicken chili:

  • Pumpkin puree: 3/4 cup (150g) adds moisture and natural sweetness. Ensure you use plain pumpkin puree and not pumpkin pie filling.

Steps to Create Your Cinnamon Rolls

Follow these step-by-step instructions to make your vegan pumpkin cinnamon rolls. Take your time and enjoy the process!

Step 1: Prepare the Dough

  1. In a large bowl, combine the warm dairy-free milk and instant dry yeast. Allow it to sit for about 5 minutes until frothy.
  2. Add the pumpkin puree, granulated sugar, room temperature vegan butter, and pumpkin pie spice to the yeast mixture. Stir until well combined.
  3. Gradually add the flour and salt, mixing until a soft dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth.

Step 2: First Rise

Place your dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm spot for 1-2 hours, or until it has doubled in size.

Step 3: Prepare the Filling

While the dough is rising, prepare the filling by mixing the melted vegan butter, brown sugar, pumpkin pie spice, and finely chopped nuts (if using) in a bowl.

Step 4: Assemble the Rolls

  1. Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle, about 1/4 inch thick.
  2. Spread the filling evenly over the dough, leaving a small border around the edges.
  3. Roll the dough tightly from one long side to the other, creating a log. Cut into equal pieces (about 1.5 inches each).

Step 5: Second Rise

Place the cut rolls in a greased baking dish, cover, and let them rise again for about 30-45 minutes.

Step 6: Bake the Rolls

Bake in a preheated oven at 350°F (175°C) for 25-30 minutes, or until golden brown.

Step 7: Prepare the Frosting

In a mixing bowl, combine the vegan cream cheese, softened vegan butter, powdered sugar, and vanilla extract until smooth. Adjust sweetness as desired.

Step 8: Serve and Enjoy

Once the rolls are baked, allow them to cool slightly before drizzling with cream cheese frosting. Enjoy warm!

Pro Tips for Success

Close-up view of a moist vegan pumpkin cinnamon roll topped with glaze.
  • Room temperature ingredients: Ensure your vegan butter and cream cheese are at room temperature for easier mixing.
  • Don’t rush the rising: Allow the dough to rise fully for the best texture; it should double in size.
  • Check the oven temperature: Use an oven thermometer to ensure your oven is at the correct baking temperature for even cooking.
  • Keep it covered: Cover the rolls while they rise to prevent drying out.
  • Experiment with spices: Feel free to adjust the amount of pumpkin pie spice based on your taste preferences.
  • Use a serrated knife: This helps to cut the dough without squishing the rolls.
  • Make ahead: You can prepare the rolls the night before and refrigerate them before the second rise.
  • Frosting options: Try adding maple syrup or cinnamon to the frosting for a fun twist.
  • Storing leftovers: Keep any leftover rolls in an airtight container at room temperature for up to 3 days.
  • Reheat gently: To enjoy leftovers, reheat in the microwave for a few seconds or in a warm oven.

Common Mistakes and Troubleshooting

Here are some common pitfalls and how to avoid them:

  • Dense rolls: This can happen if the dough isn’t kneaded enough or hasn’t risen properly. Ensure you knead until smooth and allow sufficient rising time.
  • Dry rolls: Overbaking can lead to dry rolls. Keep an eye on them towards the end of baking.
  • Filling leaks out: Make sure to seal the edges well when rolling the dough. Pinch the seams to keep the filling inside.
  • Frosting too runny: If your frosting is too thin, add more powdered sugar until the desired consistency is achieved.

Variations to Try

Feel free to mix things up with these delicious variations:

  • Pumpkin Spice Latte Rolls: Add a tablespoon of instant coffee to the filling for a coffee-flavored twist.
  • Cranberry Orange Rolls: Incorporate dried cranberries and orange zest into the filling for a tart and sweet flavor.
  • Chocolate Chip Pumpkin Rolls: Sprinkle dairy-free chocolate chips throughout the filling for a decadent touch.
  • Nutty Pecan Rolls: Use pecans or walnuts in the filling for added crunch and flavor.

Storage and Make-Ahead Instructions

You can make these rolls ahead of time or store them for later enjoyment:

  • Refrigerate dough: Prepare the dough and place it in the fridge overnight. Allow to come to room temperature before the second rise.
  • Freeze baked rolls: After baking, freeze the rolls in an airtight container for up to 3 months. Reheat in the oven when ready to enjoy.
  • Frosting storage: Keep leftover frosting in the refrigerator for up to a week; stir before using.
