Ingredients
Wet ingredients
2/3cupmaple syrup
1/3cupcoconut oil (or olive oil)
1teaspoonfine sea salt
1teaspoonground cinnamon
1teaspoonvanilla extract
Dry ingredients
3cupsold-fashioned (rolled) oats
1cupsliced or slivered almonds
2/3cupunsweetened coconut flakes
1/2cupchopped pecans
1/2cupsunflower seeds
Instructions
Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
Combine maple syrup, coconut oil, salt, cinnamon, and vanilla in a saucepan; heat for 4-5 minutes until warm and whisked together.
Mix oats, almonds, coconut flakes, pecans, and sunflower seeds in a large bowl. Pour the warm syrup mixture over and toss to coat.
Spread the mixture evenly on the prepared sheet, press down gently, and bake for 25 minutes. Rotate the pan and bake for an additional 15-20 minutes until golden. Cool completely.
Break into clusters and serve. Store leftovers in an airtight container for up to 2 weeks.
