How to Make Creamy Cajun Shrimp Pasta

Juicy Cajun shrimp pasta topped with herbs and Parmesan cheese.

Step 1: Cook Your Protein Pasta

Start by bringing a large pot of salted water to a boil. Cook the protein pasta according to package directions until just al dente. Remember to reserve 1/2 cup of pasta water before draining.

Step 2: Prepare the Shrimp

Pat the shrimp dry and toss them with 1 teaspoon of Cajun seasoning, along with a pinch of salt and black pepper to enhance their flavor.

Step 3: Sauté the Shrimp

Heat olive oil and butter in a large skillet over medium-high heat. Add the shrimp in a single layer, cooking for 1–2 minutes on each side until they turn pink and opaque. Transfer the shrimp to a plate and set aside.

Step 4: Cook the Vegetables

Lower the heat to medium. Add the diced onion and sliced bell pepper to the skillet, cooking for about 4–5 minutes until softened. Stir in minced garlic and cook for an additional 30 seconds until fragrant.

Step 5: Build the Sauce

Sprinkle in the remaining Cajun seasoning, smoked paprika, and red pepper flakes if desired. Stir for 10–15 seconds to release the spices’ aromas. Pour in the broth, scraping up any browned bits from the skillet. Simmer for 2 minutes to reduce slightly.

Step 6: Add Creaminess

Stir in the half-and-half, bringing it to a gentle simmer. Reduce the heat to low and add Parmesan cheese, stirring until it melts and the sauce is smooth.

Step 7: Incorporate Greek Yogurt

In a small bowl, whisk the Greek yogurt with 2 tablespoons of warm sauce to temper it. This step ensures the yogurt doesn’t curdle when added to the skillet. Stir the tempered yogurt into the sauce, keeping the heat low to avoid boiling.

Step 8: Combine Everything

Add the cooked pasta and shrimp to the sauce, tossing gently until everything is well coated. If the sauce is too thick, add splashes of reserved pasta water to achieve your desired consistency.

Step 9: Final Touches

Finish by adding lemon juice and adjusting salt, pepper, and Cajun seasoning to taste. The sauce should be creamy, slightly tangy, and warming.

Step 10: Serve and Enjoy

Top with chopped parsley or scallions and extra Parmesan. Serve hot with lemon wedges for an added burst of flavor.

Pro Tips for Perfect Cajun Shrimp Pasta

Here are some expert insights to elevate your cooking experience:

  • Don’t Overcook the Shrimp: Cook shrimp just until they turn pink and opaque to avoid rubbery texture.
  • Use Fresh Ingredients: Fresh garlic and herbs make a noticeable difference in flavor.
  • Adjust the Spice Level: Modify the amount of Cajun seasoning and red pepper flakes based on your heat preference.
  • Reserve Pasta Water: This starchy water is perfect for adjusting the sauce’s consistency.
  • Experiment with Proteins: Try adding chicken or other seafood to vary the protein source.
  • Garnish Generously: Fresh herbs and extra cheese enhance the dish’s visual appeal and flavor.
  • Make It Ahead: Prepare the sauce and cook the pasta in advance; combine just before serving.
  • Store Properly: Refrigerate leftovers in an airtight container for up to 3 days.

Common Mistakes and Troubleshooting

Even the best chefs make mistakes. Here are some common pitfalls to avoid:

  • Overcooking Pasta: Always check the pasta a minute before the package instructions suggest to ensure it’s al dente.
  • Curdled Sauce: Make sure to temper the Greek yogurt before adding it to the sauce to prevent curdling.
  • Too Spicy: If you accidentally add too much heat, balance it with a touch of sugar or additional cream.
  • Thin Sauce: If the sauce is too thin, simmer it longer to reduce, or add more cheese to thicken it.

Feel free to customize this recipe to suit your taste preferences:

  • Vegetarian Version: Swap shrimp for sautéed mushrooms and zucchini for a delightful meatless option.
  • Spicy Cajun Shrimp: Increase the red pepper flakes for an extra kick of heat.
  • Creamy Spinach Addition: Stir in fresh spinach before serving for added nutrition and color.
  • Lemon Garlic Shrimp: Add more lemon juice and zest for a brighter flavor profile.

Make Ahead and Storage Instructions

This dish can be prepared ahead of time, making it a great option for meal prep:

  • Make Ahead: Prepare the sauce and shrimp, and store separately from the pasta. Combine just before serving.
  • Refrigeration: Store leftovers in an airtight container for up to 3 days. Reheat gently on the stove, adding a splash of broth or water to loosen the sauce.
  • Freezing: While the pasta can be frozen, it’s best to freeze the sauce separately. Reheat and combine when ready to serve.

Follow these simple steps to create your one-pan masterpiece:

  • Prep the Vegetables: Slice the zucchini and yellow squash into half-rounds, and cut the red bell pepper and onion into strips. Add all the vegetables to a large bowl.

  • Combine: Remove the skillet from heat and add the cooked sausage and chopped parsley. Toss everything together and taste, adjusting seasonings as necessary.
  • Serve: Enjoy immediately or portion out for meal prep. This recipe can easily be divided into four servings.

Pro Tips for Cajun Cooking

Here are some expert insights to elevate your Cajun cooking experience:

  • Use Fresh Ingredients: Whenever possible, opt for fresh vegetables and herbs to maximize flavor.
  • Adjust Spice Levels: Start with less cayenne and add more to taste; it’s easier to add than to take away!

  • Experiment with Seasonings: Try adding a dash of hot sauce or a sprinkle of Cajun seasoning mix for an extra kick.
  • Serve with a Side: Pair with crusty bread or a simple green salad to round out the meal.
  • Store Properly: Use airtight containers to keep leftovers fresh.
  • Reheat Gently: When reheating, do so on low heat to prevent overcooking the vegetables.

  • Lemon wedges: For serving.

Step-by-Step Instructions

Now that we have our ingredients ready, let’s walk through the steps to create this delightful dish:

Prepare the Salmon

1. **Marinate the salmon**: Start by patting the salmon fillets dry with a paper towel. Season both sides with salt and freshly cracked black pepper. In a small bowl, mix together the Dijon mustard, honey, coconut aminos, and garlic powder. Spoon or brush this glaze onto the salmon, ensuring each filet is well-coated. Sprinkle paprika on top for color and flavor. Allow the salmon to marinate for at least 15 minutes while you prepare the vegetables.

Prepare the Vegetables

2. **Chop and Season**: While the salmon is marinating, chop the broccoli into florets or trim the green beans. In a mixing bowl, drizzle the vegetables with avocado oil, season with salt, garlic powder, black pepper, and paprika. Toss well to coat the vegetables evenly, ensuring that they are well-oiled to prevent burning.

Cooking Methods

3. **Air Fryer Method**: Preheat your air fryer to 380°F (193°C). Place the seasoned vegetables in the air fryer basket in a single layer. Air fry for about 5 minutes, then shake or toss the vegetables and continue air frying for another 4 to 8 minutes, until they are crispy and lightly charred. Cooking time may vary based on your air fryer model.
4. **Cook the Salmon**: You can choose from three methods: Skillet, Air Fryer, or Oven:

  • Skillet Method: Heat a cast iron pan or skillet over medium-high heat and add oil. Carefully place the salmon skin-side up (flesh side down) into the pan. Sear for 3-4 minutes until browned, then flip and cook for another 3-4 minutes or until the salmon is cooked to your desired doneness.
  • Air Fryer Method: After cooking the vegetables, add the salmon to the air fryer basket in a single layer. Air fry at 400°F (204°C) for 7-8 minutes, depending on thickness.
  • Oven Method: Preheat the oven to 400°F (204°C). Place the salmon on a parchment-lined baking sheet and bake for 9-11 minutes or until cooked through. For a charred finish, switch to broil for the last 1-1.5 minutes, watching carefully to avoid burning.

Finishing Touches

5. **Garnish and Serve**: Once the salmon is cooked, garnish with finely chopped parsley and dill. Serve the salmon alongside the air-fried vegetables and lemon wedges for an added burst of freshness.
