Instructions
Preheat oven to 400°F (200°C).
Slice zucchinis lengthwise, scoop out centers, and chop reserved flesh.
Place zucchini halves in a baking dish, drizzle with 1 tbsp olive oil, and season with salt and pepper.
Cook onion, garlic, and bell pepper in remaining olive oil; add chopped zucchini flesh and cook briefly. Add ground beef, cook until browned, then stir in tomatoes, tomato paste, herbs, salt, and pepper; simmer 5 mins.
Fill zucchini with beef mixture, top with cheeses, and bake for 20-25 mins until tender and golden. Garnish with herbs before serving.
Notes
For a vegetarian version, substitute ground beef with lentils or mushrooms.
