Delicious stuffed zucchini halves baked to perfection with savory meat and cheese, topped with fresh herbs.

4mediumzucchinis(washed and dried)
1tbspolive oil

1lbground beef, turkey, or sausage
1smallonion(diced)
2clovesgarlic(minced)
1cupmarinara sauce or tomato sauce
1tspItalian seasoning
½tspred pepper flakes (optional)
½cupgrated Parmesan cheese
1cupshredded mozzarella cheese

Instructions
Preheat oven to 375°F (190°C). Grease a baking dish.
Slice zucchinis in half, scoop out flesh, brush with olive oil, and season with salt and pepper.
Bake zucchini halves for 10 minutes. Meanwhile, cook meat with onions and garlic, add sauce, Italian seasoning, red pepper flakes, and Parmesan. Mix well.
Fill zucchini shells with meat mixture, top with mozzarella, and bake for 15–20 minutes until cheese melts and zucchini is tender.
Garnish with fresh herbs and serve hot.

For a vegetarian version, substitute the meat with beans or vegetables.
