Ingredients

Eggs

  • 8 large eggs
  • 1/3 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked diced potatoes
  • 1/2 cup chopped spinach
  • 1/4 cup diced onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions 

  • Preheat oven to 375°F (190°C) and grease a muffin tin.
  • Whisk eggs and milk until smooth.
  • Sauté onion in olive oil until soft. Add potatoes and spinach.
  • Divide vegetables into muffin cups, add cheese, then pour egg mixture on top.
  • Bake for 20–22 minutes until set. Rest briefly, then serve.
