Instructions
Preheat oven to 375°F (190°C) and grease a muffin tin.
Whisk eggs and milk until smooth.
Sauté onion in olive oil until soft. Add potatoes and spinach.
Divide vegetables into muffin cups, add cheese, then pour egg mixture on top.
Bake for 20–22 minutes until set. Rest briefly, then serve.
