White Bean Chicken Chili

A hearty and flavorful chili combining tender chicken, white beans, and spices, perfect for a comforting meal.

Ingredients

Oil

  • 2 tablespoons olive oil

Vegetables

  • 1 medium onion (diced)
  • 3 cloves garlic (minced)

Chicken

  • 2 large boneless, skinless chicken breasts

Broth & Cans

  • 4 cups chicken broth
  • 2 15 ounce cans white beans (drained and rinsed)
  • 1 4 ounce can diced green chiles

Spices

  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1 teaspoon salt

Additional ingredients

  • 1 cup frozen corn
  • 8 ounces cream cheese (softened and cubed)
  • 1/2 cup heavy cream
  • 1 cup shredded Monterey Jack cheese

Toppings

  • shredded cheese, sour cream, sliced avocado, fresh cilantro, or tortilla chips (optional toppings)

Instructions 

  • Heat olive oil in a large Dutch oven over medium-high heat.
  • Add diced onion and cook 4-5 minutes until softened; then add minced garlic and cook 1 minute.
  • Add chicken breasts and enough broth to cover; bring to a boil, then simmer 20 minutes until cooked through. Remove, shred, and set aside.
  • Add beans, green chiles, and spices; bring to a boil, then simmer 10 minutes. Stir in corn and cook 3 minutes.
  • Reduce heat to low; add cream cheese and stir until melted. Mix in heavy cream and Monterey Jack cheese until smooth. Return shredded chicken to pot and cook 2 minutes until heated through.

Notes

For extra flavor, top with fresh cilantro and sliced avocado before serving.
