Ingredients

Vegetables

  • 1 tsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves minced garlic
  • 2 medium carrots, peeled and sliced
  • 2 celery stalks sliced celery
  • 1 medium zucchini, chopped
  • 1 cup green beans, chopped
  • 1 cup chopped cabbage
  • 1 can diced tomatoes (no salt added)
  • 4 cups low-sodium vegetable broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/4 tsp crushed red pepper flakes (optional)

  • 2 cups fresh spinach or kale leaves

Instructions 

  • Wash and chop all vegetables into bite-sized pieces.
  • Sauté onions, garlic, and carrots in a large pot with a splash of broth for 4–5 minutes.
  • Add cabbage, celery, zucchini, green beans, tomatoes, and broth. Bring to a boil.
  • Season with herbs, salt, and pepper. Cover and simmer for 20–25 minutes until vegetables are tender.
  • Stir in spinach or kale leaves and cook for 2 minutes. Adjust seasonings and serve.
