A delicious and visually stunning vegan marble cake, perfect for any occasion. Easy to prepare with simple ingredients and a beautiful swirl pattern.

Ingredients

dry ingredients

  • 30 g cocoa powder
  • 4 Tbsp boiling water

wet ingredients

  • 120 g silken tofu (excess liquid drained)
  • 200 ml unsweetened non-dairy milk (soy is best)
  • 1 Tbsp vanilla extract
  • 1.5 tsp cider or white vinegar or lemon juice

dry mix

  • 240 g plain all-purpose flour
  • 25 g cornflour (cornstarch)
  • 1.5 tsp baking powder
  • 0.25 tsp bicarbonate of soda (baking soda)
  • 0.5 tsp salt
  • 275 g caster superfine sugar
  • 120 g vegan block butter, melted
  • 45 ml neutral oil (sunflower, vegetable, canola, mild olive)

Instructions 

  • Preheat oven to 180°C (160°C fan) and line a loaf tin with parchment.
  • Whisk cocoa powder with boiling water to form a paste; set aside.
  • Blend tofu, milk, vanilla, and vinegar until smooth.
  • Mix dry ingredients; add melted butter and oil, then combine wet and dry to form batter.
  • Divide batter, mix part with cocoa paste, then layer and swirl in the tin.
  • Bake for 60-75 minutes, cool, then serve.

Notes

Swirl gently to create a marbled effect and avoid overmixing.
