A light and fluffy vanilla sponge cake perfect for any occasion, easily customizable with fillings and toppings.

Ingredients

Dry ingredients

  • 250 g self-raising flour
  • 180 g caster sugar (use according to desired sweetness)
  • 1 tsp baking powder

Wet ingredients

  • 250 g softened unsalted butter (plus more for greasing)
  • 4 medium eggs (at room temperature)
  • 2 tsp vanilla extract
  • 2 tbsp full fat milk
  • 1/2 tsp salted caramel extract (optional)

Instructions 

  • Preheat oven to 180°C (350°F). Grease two 8-inch cake pans and dust with flour.
  • Sift flour and baking powder together. In a bowl, beat butter and sugar until light and fluffy, about 5 minutes.
  • Add eggs one at a time, mixing well after each addition. Mix in vanilla extract, caramel extract (if using), and milk.
  • Gently fold in the sifted flour mixture until smooth. Divide batter evenly into prepared pans.
  • Bake for 20 minutes or until a toothpick inserted comes out clean. Cool for 5 minutes, then turn onto a wire rack.
  • Sandwich with buttercream or jam, slice, serve, and enjoy.

Notes

Ensure eggs are at room temperature for best results.
