A light and fluffy vanilla sponge cake perfect for any occasion, easily customizable with fillings and toppings.

Instructions
Preheat oven to 180°C (350°F). Grease two 8-inch cake pans and dust with flour.
Sift flour and baking powder together. In a bowl, beat butter and sugar until light and fluffy, about 5 minutes.
Add eggs one at a time, mixing well after each addition. Mix in vanilla extract, caramel extract (if using), and milk.
Gently fold in the sifted flour mixture until smooth. Divide batter evenly into prepared pans.
Bake for 20 minutes or until a toothpick inserted comes out clean. Cool for 5 minutes, then turn onto a wire rack.
Sandwich with buttercream or jam, slice, serve, and enjoy.
Notes
Ensure eggs are at room temperature for best results.
