Ingredients

Dough and Batter

  • 1/2 cup unsalted butter, softened
  • 3 tbsp unsalted butter, softened
  • 1/4 cup packed brown sugar
  • 1/2 tsp kosher salt (plus pinch)
  • 2 pears halved, cored and sliced into 1/8-inch pieces
  • 1/2 cup white sugar
  • 2 large eggs
  • 1/2 tsp vanilla extract
  • 3 tbsp buttermilk
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger

Instructions 

  • Preheat oven to 350°F. Prepare the cake pan with butter, parchment, and flour.
  • Cook 7 tbsp of butter until browned, then melt brown sugar in the butter. Toss pears in the sauce and set aside.
  • Mix flour, baking soda, baking powder, salt, cinnamon, and ginger. Beat butter and sugar until fluffy, then add eggs and vanilla. Alternate adding flour mixture and buttermilk, then pour batter over pears in the pan.
  • Bake for 25-30 minutes, then invert the cake onto a plate and remove the pan. Serve warm or at room temperature.

Notes

Ensure the butter is browned properly for a nutty flavor.
