This creamy pesto chicken pasta combines tender chicken, fresh spinach, and sun-dried tomatoes in a rich, flavorful sauce for a satisfying meal.

Ingredients

Pasta

  • 12 oz Short Pasta (penne, rotini, or farfalle)

Chicken

  • 2 pieces Chicken Breasts (thinly sliced)

Seasonings

  • 1 tsp Garlic Powder
  • to taste Salt Salt
  • to taste Pepper Pepper

Liquids & Fats

  • 2 tbsp Olive Oil
  • 2 tbsp Butter
  • 2 tbsp All-Purpose Flour

Broth & Cream

  • 2 cups Chicken Broth
  • 1 cup Heavy Cream

Pesto & Flavorings

  • 1/2 cup Pesto (good quality)
  • 1 tbsp Lemon Juice

Sun-Dried Tomatoes

  • 1/3 cup Sun-Dried Tomatoes (chopped)

Vegetables

  • 2 cups Fresh Baby Spinach

Cheese & Garnish

  • 1/2 cup Parmesan Cheese (grated)

Instructions 

  • Cook pasta according to package instructions; drain and set aside.
  • Sauté sliced chicken in olive oil until cooked through; remove and set aside.
  • In the same pan, melt butter, whisk in flour, then gradually add chicken broth and heavy cream, stirring until thickened.
  • Stir in pesto, lemon juice, sun-dried tomatoes, spinach, and cooked chicken; cook until spinach wilts.
  • Combine sauce with cooked pasta, top with Parmesan cheese, and serve.

Notes

Use high-quality pesto for the best flavor and consider adding red pepper flakes for a spicy kick.
