Instructions
Heat olive oil and sauté chopped vegetables for 4 minutes.

Add potatoes, broth, and lentils; season and simmer for 15-20 minutes.
Blend until smooth, then adjust salt to taste.
Serve with lemon wedges, parsley, chili oil, and pita bread.
Notes
For extra flavor, add roasted chickpeas or a drizzle of chili oil.
