A hearty and flavorful Turkish red lentil soup, perfect for a comforting meal with fresh herbs and lemon.

Ingredients

Oil

  • 2 tablespoons extra virgin olive oil

Vegetables

  • 1 large onion (chopped)
  • 2 carrots carrots (chopped)
  • 1 rib celery (chopped)

Garlic

  • 3 cloves garlic (minced or grated)

Spices and Paste

  • 1 teaspoon ground cumin
  • 2 tablespoons tomato paste

Potatoes

  • 2 medium potatoes (peeled and chopped)

Broth and Lentils

  • 8 cups vegetable broth (add 4 cups at a time if needed)
  • 2 cups split red lentils (dried, rinsed)

Seasoning

  • 1.5 teaspoons salt
  • 2 twists black pepper

Garnishes and Oil

  • 1 lemon lemon (cut into wedges)
  • 1 handful flat-leaf parsley (chopped)
  • pita bread pita bread
  • chili oil chili oil (made with garlic, red pepper flakes, and olive oil)

Instructions 

  • Heat olive oil and sauté chopped vegetables for 4 minutes.
  • Add garlic, cumin, and tomato paste; fry for 1 minute.
  • Add potatoes, broth, and lentils; season and simmer for 15-20 minutes.
  • Blend until smooth, then adjust salt to taste.
  • Serve with lemon wedges, parsley, chili oil, and pita bread.

Notes

For extra flavor, add roasted chickpeas or a drizzle of chili oil.
