Instructions
Preheat oven to 400°F (200°C).
Cook onion and peppers in olive oil for 3-4 minutes until tender.
Add turkey and cook until mostly cooked through, about 5-6 minutes.
Stir in spices, cook for 30 seconds to 1 minute, then add tomatoes, beans, and corn; cook 2-3 minutes.
Top with cheese, transfer to oven, and bake 5-10 minutes until cheese melts and is golden.
Serve with cilantro, green onions, avocado, and lime wedges.
Notes
