A quick and flavorful one-pan meal combining ground turkey, rice, beans, and spices, topped with cheese and fresh garnishes.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 cup prepared chunky tomato salsa
  • 1 15-ounce can pinto beans, drained
  • 1 cup frozen corn kernels
  • 1-1/2 teaspoons coarse kosher salt (see note)
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1-1/2 cups long-grain white rice, rinsed well
  • 3 cups chicken broth or water
  • 1 cup shredded cheddar or Mexican cheese

Garnishes

  • to taste Cilantro, for garnishing
  • to squeeze Fresh lime
  • optional Additional salsa

Instructions 

  • Heat olive oil in a large skillet over medium-high heat. Cook ground turkey until no longer pink, about 5-7 minutes.
  • Add salsa, salt, garlic powder, chili powder, oregano, and cumin. Cook for 1 minute until fragrant.
  • Stir in rice, beans, corn, and broth. Bring to a boil, then cover and simmer for 20 minutes until rice is tender.
  • Turn off heat, sprinkle cheese on top, cover, and let sit for 5 minutes to melt.
  • Fluff rice, garnish with cilantro, and serve with lime and optional salsa.

Notes

Adjust seasoning to taste and serve with fresh lime for added flavor.
