Enjoy these delicious and easy-to-make turkey taco cups, perfect for a flavorful appetizer or main dish.

Ingredients

Meat and Dairy

  • 1 lb ground turkey
  • 3 tablespoons olive oil
  • 2 cloves garlic
  • 1/2 white onion white onion (diced) (about 1 cup)
  • 1 cup corn
  • 1 cup black beans
  • 2 oz fresh spinach ((optional))
  • 1 tablespoon taco seasoning
  • 3/4 cup mozzarella cheese (shredded)
  • 3/4 cup cheddar cheese (shredded)

Bread and Cooking Supplies

  • 6 large flour tortillas (burrito sized)
  • to taste cooking spray or oil cooking spray or more oil to grease muffin tin

Instructions 

  • Preheat oven to 350°F (175°C).
  • Cut out 12 circles from stacked tortillas using a 4-inch cutter. Prebake in greased muffin tins for 10-15 minutes until browned.
  • Cook onion and garlic in olive oil until translucent. Add turkey and cook 10 minutes, breaking it apart. Mix in corn, beans, spinach, and taco seasoning; cook 5 minutes. Stir in half the cheese until melted.
  • Fill prebaked cups with turkey mixture, top with remaining cheese, and bake for 5 minutes until cheese melts.

Notes

Use a muffin tin to create perfect cup shapes and enjoy!
