3tablespoonsolive oil
2clovesgarlic
1/2white onionwhite onion (diced)(about 1 cup)
1cupcorn
1cupblack beans
2ozfresh spinach((optional))
1tablespoontaco seasoning
3/4cupmozzarella cheese (shredded)
3/4cupcheddar cheese (shredded)

6largeflour tortillas (burrito sized)
to tastecooking spray or oilcooking spray or more oil to grease muffin tin
Instructions
Preheat oven to 350°F (175°C).
Cut out 12 circles from stacked tortillas using a 4-inch cutter. Prebake in greased muffin tins for 10-15 minutes until browned.
Cook onion and garlic in olive oil until translucent. Add turkey and cook 10 minutes, breaking it apart. Mix in corn, beans, spinach, and taco seasoning; cook 5 minutes. Stir in half the cheese until melted.
Fill prebaked cups with turkey mixture, top with remaining cheese, and bake for 5 minutes until cheese melts.
