A quick and flavorful pasta dish combining ground turkey, fresh spinach, and pesto for a satisfying meal.

Ingredients

Protein

  • 1 lb Ground Turkey (or substitute with ground chicken or beef)
  • 16 oz Pasta (your favorite kind—brown rice, gluten-free, einkorn, or classic)
  • 2 cups Spinach (chopped)
  • 6.5 oz Pesto (use half or a whole jar, depending on your preference)
  • 2 tsp Olive Oil
  • 1.5 tsp Garlic Powder (or 2 fresh cloves, minced)
  • 1.5 tsp Onion Powder
  • 2 tsp Italian Seasoning
  • to taste Salt and Pepper

Optional vegetables

  • as desired Broccoli, Zucchini, Yellow Squash, Bell Peppers, Green Peas, Mushrooms (chopped)

Instructions 

  • Boil salted water and cook pasta according to package instructions. Drain and set aside.
  • In the same pot, heat olive oil over medium heat. Add ground turkey and season with garlic powder, onion powder, Italian seasoning, salt, and pepper. Cook until browned.
  • Add chopped spinach and other vegetables. Cook until greens are wilted and vegetables are tender.
  • Reduce heat to low. Stir in cooked pasta and pesto until evenly coated and warmed through.
  • Adjust seasoning if needed. Serve hot, optionally topped with grated Parmesan.

Notes

Feel free to add more vegetables for extra nutrition and flavor.
