A quick and nutritious pasta dish combining turkey, pesto, and fresh broccoli for a satisfying meal.

Ingredients

Pasta and Vegetables

  • 6 ounces whole-wheat fusilli pasta
  • 3 cups small broccoli florets
  • 2 cups shredded cooked turkey or chicken
  • 1 cup grape tomatoes, halved
  • 0.75 cup prepared pesto
  • 1 tablespoon lemon juice
  • 0.125 teaspoon salt
  • 0.25 cup grated Parmesan cheese
  • 0.25 teaspoon freshly cracked black pepper

Instructions 

  • Bring a large pot of water to a boil. Add pasta; cook for 3 minutes less than package directions.
  • Add broccoli and cook until tender, about 3 minutes. Drain and return to pot.
  • Stir in turkey, tomatoes, pesto, lemon juice, and salt.
  • Divide among 4 plates and top with Parmesan and pepper, if desired.

Notes

You can substitute chicken for turkey or add extra vegetables for more nutrition.
