  • 1 pound ground dark turkey
  • 3 cloves garlic, minced
  • 1 small yellow onion, diced
  • 1 teaspoon cumin
  • 0.5 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt, or to taste
  • 0.25 teaspoon black pepper, or to taste
  • 4 oz hatch chilies
  • 10 oz peeled and diced sweet potato
  • 15 oz can black beans, drained and rinsed
  • 15 oz red enchilada sauce
  • 1 each lime, juiced
  • 2 teaspoons arrowroot starch
  • 4 oz pepper jack cheese, shredded
  • 6 oz Colby jack cheese, shredded

Garnishes

  • Greek yogurt or sour cream (for garnish and serving)

Instructions 

  • Preheat oven to 400°F (200°C).
  • Cook turkey in a skillet with olive oil until browned, then add garlic, onion, and spices; cook until translucent.
  • Add hatch chilies, sweet potato, black beans, and enchilada sauce; simmer until sweet potatoes are tender.
  • Mix lime juice with arrowroot starch, then stir into skillet along with shredded pepper jack cheese.
  • Top with Colby Jack cheese, bake for 10-12 minutes until bubbly and golden, then garnish with cilantro, avocado, jalapeño, and lime wedges.

Notes

For extra flavor, let the skillet rest for 10 minutes before serving.
