Instructions
Preheat oven to 400°F (200°C).
Cook turkey in a skillet with olive oil until browned, then add garlic, onion, and spices; cook until translucent.
Add hatch chilies, sweet potato, black beans, and enchilada sauce; simmer until sweet potatoes are tender.
Mix lime juice with arrowroot starch, then stir into skillet along with shredded pepper jack cheese.
