Ingredients
Pasta
16ozYour favorite pasta shape (medium shells, elbow, Lumache)
4Tbspssalted butter(Can substitute with unsalted butter and add 1 tsp salt to sauce)
4Tbspsorganic all-purpose flour
3cupsAlmond milk, unsweetened(Can use whole milk or plant-based milk)
1cuporganic pumpkin puree(NOT Pie filling)
2cupsSharp cheddar, freshly-grated
1cupMild cheddar cheese, freshly-grated
1/2tspblack pepper
1/2tspsmoked paprika
1/2tspgarlic powder
1/2tspground cinnamon
1/4tspground nutmeg
1/4tspground allspice
Instructions
Cook pasta according to package instructions until al dente. Drain and set aside.
In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes.
Gradually whisk in almond milk and pumpkin puree. Cook until mixture thickens, about 5 minutes.
Stir in grated cheeses and spices until melted and smooth. Mix in cooked pasta.
Serve hot, garnished with additional cheese or spices if desired.
Notes
For a creamier texture, add a splash of heavy cream or plant-based cream at the end.
