This rich and moist banana bread combines ripe bananas, chocolate chips, and a hint of coffee for a delicious treat.

Ingredients

Butter and Oils

  • 113 g unsalted butter (cubed and browned)
  • 25 g vegetable oil

Sweeteners

  • 150 g light brown sugar, packed

Eggs and Vanilla

  • 2 large eggs
  • 1 tsp vanilla

Coffee

  • 1 tsp instant coffee (dissolved in hot water)
  • 1 tsp hot water

Fruits and Dairy

  • 440 g ripe bananas, mashed
  • 120 g Greek yogurt

Flour and Leavening

  • 227 g all purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt

Chocolate Chips

  • 300 g chocolate chips or chopped chocolate (semi-sweet or dark recommended)

Instructions 

  • Preheat oven to 340°F (170°C) and line a loaf pan with parchment paper.
  • Brown the butter in a saucepan over medium-low heat until golden and fragrant, then add to a large bowl.
  • Whisk in oil and brown sugar, then add eggs, vanilla, and coffee dissolved in water; whisk until smooth.
  • Mix in mashed bananas and Greek yogurt, then sift in flour, baking powder, baking soda, and salt; gently fold in chocolate chips.
  • Pour batter into the prepared loaf pan, optionally sprinkle more chocolate chips on top, and bake for 65-75 minutes until a toothpick comes out clean.
  • Cool in the pan, then remove and serve once fully cooled.

Notes

For best results, do not overmix the batter to keep the bread tender.
