Instructions
Preheat oven to 340°F (170°C) and line a loaf pan with parchment paper.
Brown the butter in a saucepan over medium-low heat until golden and fragrant, then add to a large bowl.
Whisk in oil and brown sugar, then add eggs, vanilla, and coffee dissolved in water; whisk until smooth.
Mix in mashed bananas and Greek yogurt, then sift in flour, baking powder, baking soda, and salt; gently fold in chocolate chips.
Pour batter into the prepared loaf pan, optionally sprinkle more chocolate chips on top, and bake for 65-75 minutes until a toothpick comes out clean.
Cool in the pan, then remove and serve once fully cooled.
Notes
For best results, do not overmix the batter to keep the bread tender.
