A hearty and flavorful beef chili perfect for cozy nights, packed with spices and topped with fresh ingredients.

Ingredients

Meat

  • 500 g diced beef stewing beef or brisket (dried with kitchen paper and seasoned with salt)
  • 2 tablespoons vegetable oil
  • 1 red onion diced red onion (reserve 2 tablespoons for serving)
  • 6 cloves garlic (minced, adjust to taste)
  • 2 tablespoons tomato puree
  • ½ tablespoon chilli powder
  • 1 teaspoon paprika
  • 2 teaspoons cumin
  • ½ teaspoon cinnamon
  • 395 g tin taco mixed beans in tomato sauce
  • 400 g tin chunky chopped tomatoes
  • 175 ml apple juice
  • 300 ml beef broth (made with a beef stock cube)
  • 1 bay leaf bay leaf

Toppings

  • Shredded cheddar cheese
  • 1 avocado sliced avocado
  • 1 green jalapeno sliced jalapeno
  • 1 bunch coriander chopped coriander

Instructions 

  • Heat vegetable oil in a large Dutch oven over medium heat for 3 minutes.
  • Add seasoned beef and brown on all sides for about 5 minutes.
  • Add diced onion (reserve 2 tbsp) and minced garlic; cook until soft and fragrant, about 2 minutes.
  • Mix cumin, chilli powder, cinnamon, paprika; add to pan with tomato puree and bay leaf. Cook for 2 minutes.
  • Pour in beans, chopped tomatoes, apple juice, and beef broth. Bring to boil, then simmer covered for 3-4 hours until beef is tender.
  • Serve with toppings and rice if desired.

Notes

For best flavor, simmer slowly and adjust seasoning to taste.
