Ingredients

Dry ingredients

  • 1.5 cups almond flour
  • 1.5 cups protein powder
  • 1.5 tsp baking powder
  • 0.5 tsp cinnamon

Wet ingredients

  • 3 eggs eggs
  • 0.67 cup almond milk
  • 0.5 cup blueberries

Instructions 

  • Whisk dry ingredients together and set aside.
  • Beat eggs and almond milk in a separate bowl.
  • Combine wet and dry ingredients, then fold in blueberries.
  • Heat skillet over medium low, spray with cooking spray, and pour ΒΌ cup batter for each pancake. Cook 2-3 minutes per side.
  • Serve warm with vegan yogurt and maple syrup.

Notes

For extra flavor, add a splash of vanilla to the wet ingredients.
