This hearty Texas-style beef chili is rich, flavorful, and tender, perfect for a comforting meal that will impress everyone at the table.

Ingredients

Meat

  • 2 lb beef chuck roast, cut into 1 inch cubes
  • 2 tbsp avocado oil

Vegetables

  • 1 white onion diced white onion
  • 2 diced bell peppers
  • 1 diced poblano pepper
  • 1 minced jalapeno
  • 6 garlic cloves minced garlic

Canned Goods

  • 2 cans chopped tomatoes
  • 1 can kidney beans, drained
  • 1 can hatch chilis

Liquids & Spices

  • 4 cups chicken or beef stock
  • 1 tbsp fish sauce
  • 3 tbsp chili powder
  • 1 tbsp smoked paprika
  • 1 tsp chipotle powder
  • 2 tsp oregano
  • 1 tbsp cumin
  • 1 bay leaf bay leaf

Finish & Garnish

  • 1 lime juiced
  • 0.25 cup cilantro, chopped

Optional toppings

  • chopped red onion, avocado, cilantro, cheese, sour cream chopped red onion, avocado, cilantro, cheese, sour cream (for serving)

Instructions 

  • Season beef with salt and pepper, pat dry, then sear in hot oil until golden, about 2 minutes per side. Remove and set aside.
  • Sauté onions, bell peppers, and poblano until translucent, then add jalapeno and garlic, cooking for 2 minutes.
  • Add tomatoes, beans, chilis, stock, spices, and bay leaf. Return beef to the pot and simmer covered for 2 hours until tender.
  • Remove bay leaf, stir in lime juice and cilantro, then adjust seasoning. Serve with optional toppings.

Notes

For extra flavor, let the chili rest for 30 minutes before serving to allow flavors to meld.
