Enjoy these flavorful lettuce wraps filled with savory ground beef and vegetables, topped with a delicious homemade teriyaki sauce.

Ingredients

Meat and Vegetables

  • 1 lb lean ground beef
  • 20 oz bag frozen stir fry vegetables
  • 1 bag jasmine rice (or 1 cup cooked jasmine rice)

Lettuce and Sauces

  • 1 head live butter lettuce (or lettuce wraps of choice)
  • 1/3 cup low sodium soy sauce
  • 2 tbsp brown sugar
  • 1/2 tbsp seasoned rice vinegar
  • 2 tbsp sesame oil
  • 2 tbsp minced garlic
  • 2 tbsp ginger paste
  • 1.5 tbsp corn starch

Green onions to taste

Instructions 

  • Cook ground beef in a skillet over medium heat until mostly cooked, about 8 minutes.
  • Add frozen vegetables, cover, and cook for 10-12 minutes until softened.
  • Mix soy sauce, brown sugar, rice vinegar, garlic, ginger, sesame oil, and corn starch; cook rice separately.
  • Combine cooked rice and sauce with beef and vegetables; cook briefly to thicken, then rest for 1-2 minutes.
  • Serve in lettuce leaves, topped with green onions and optional sauces.

Notes

Use fresh lettuce for best crunch and flavor.
