A vibrant and flavorful salad combining tender teriyaki chicken with fresh vegetables and tropical toppings, perfect for a light yet satisfying meal.

Ingredients

Protein

  • 1 piece Recipe Sweet Chili Teriyaki Chicken (prepared according to recipe)
  • 1 small head Romaine lettuce (chopped)
  • 0.5 red cabbage red cabbage (thinly sliced)
  • 1 fresh pineapple fresh pineapple (chopped, will use 1 cup in dressing)
  • 1 cup matchstick carrots
  • 1 red bell pepper red bell pepper (julienned then cut into thirds)
  • 1 cup snow peas (julienned then cut into thirds)
  • 5 green onions green onions (thinly sliced)
  • 1 cup macadamia nuts (toasted)
  • 0.5 cup sweetened coconut flakes (toasted)
  • to taste fried wonton strips (optional)
  • 3 tablespoons honey
  • 0.25 cup apple cider vinegar
  • 1.5 teaspoons toasted sesame oil
  • 1 clove garlic (peeled)
  • 1.5 teaspoons freshly grated ginger
  • 0.25 teaspoon salt
  • 1 tablespoon mayonnaise (optional for creamier)
  • 0.5 cup canola oil
  • 1 tablespoon sesame seeds

Instructions 

  • Prepare chicken according to recipe, then chop or slice. Reserve extra sauce.
  • Blend dressing ingredients (except oils and sesame seeds) until smooth, then add oils and seeds and pulse. Refrigerate.
  • Layer or toss salad ingredients in a large bowl. Drizzle with reserved sauce and serve.

Notes

For extra flavor, toast nuts and coconut before adding.
