Ingredients

Protein

  • 1.5 pounds boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Salad

  • 4 cups mixed greens (arugula, spinach, kale)
  • 1 cup cherry tomatoes (halved)
  • 0.5 cup cucumber (thinly sliced)
  • 0.5 cup fresh parsley (chopped)
  • 0.5 cup fresh mint leaves (chopped)
  • 0.25 cup fresh basil leaves (torn)
  • 0.25 cup red onion (thinly sliced)
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Instructions 

  • Mix olive oil, spices, and marinate chicken for 30 minutes.
  • Grill chicken until cooked through, then rest and slice.
  • Combine greens, tomatoes, cucumber, herbs, and onion in a bowl.
  • Whisk dressing ingredients and toss with salad and sliced chicken.

Notes

For extra flavor, marinate chicken longer and serve immediately.
