Ingredients

  • 2 tablespoons olive oil
  • 1 pound cubed boneless, skinless chicken breasts
  • 1 tablespoon garlic, minced
  • 1 pound cherry tomatoes, cut in half
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon salt
  • 0.25 cup finely chopped fresh basil
  • 2 tablespoons finely chopped fresh parsley
  • 0.5 cup kale cashew basil pesto (store-bought or homemade)
  • 2 large spiralized zucchini with excess water removed (about 4 cups)

Instructions 

  • Heat olive oil in a large skillet over medium heat and cook chicken until browned and cooked through, about 7-8 minutes.
  • Add minced garlic and cook for 1 minute until fragrant.
  • Stir in cherry tomatoes and cook for another 2-3 minutes until slightly softened.
  • Add spiralized zucchini and pesto, tossing to combine and heat through for 3-4 minutes.
  • Season with salt and black pepper, then garnish with chopped basil and parsley before serving.

Notes

For extra flavor, sprinkle with grated Parmesan cheese before serving.
