A hearty and flavorful breakfast hash combining sweet potatoes, sausage, and eggs, perfect for a satisfying start to your day.

Ingredients

Vegetables and Herbs

  • 2 medium sweet potatoes (peeled and diced into small cubes)
  • 1 lb sausage (use your favorite: Italian, breakfast, or chorizo)
  • 4 large eggs
  • 1 small onion (finely chopped)
  • 1 bell pepper bell pepper (any color, diced)
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper (optional for heat)
  • to taste Salt and pepper
  • for garnish Fresh parsley or cilantro (chopped)
  • optional Avocado slices (for serving)
  • optional Hot sauce (for serving)

Instructions 

  • Crumble the sausage and cook in a skillet until browned and crispy, then set aside.
  • Cook sweet potatoes in olive oil until tender and golden, then remove and set aside.
  • In the same skillet, cook sausage with onion, bell pepper, and garlic until vegetables are soft. Add spices and seasonings.
  • Return sweet potatoes to the skillet, toss to coat, and cook for 2-3 minutes. Make four wells, crack eggs into each, cover, and cook until eggs are done to your liking.
  • Garnish with herbs, and serve hot with optional avocado slices and hot sauce.

Notes

For extra flavor, add a dash of hot sauce or sprinkle with cheese before serving.
