A hearty and flavorful breakfast hash combining sweet potatoes, sausage, and eggs, perfect for a satisfying start to your day.

Ingredients

Vegetables

  • 2 medium sweet potatoes (peeled and diced into small cubes)
  • 1 lb sausage (use your favorite: Italian, breakfast, or chorizo)
  • 4 large eggs
  • 1 small onion (finely chopped)
  • 1 any color bell pepper (diced)
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper (optional for heat)
  • to taste Salt and pepper
  • for garnish Fresh parsley or cilantro (chopped)
  • optional Avocado slices (for serving)
  • optional Hot sauce (for serving)

Instructions 

  • Crumble the sausage and cook in a skillet until browned and crispy, then set aside.
  • In the same skillet, cook sweet potatoes with 1 tbsp olive oil for 8-10 minutes until tender and golden, then remove.
  • Cook sausage in the skillet, then add onion, bell pepper, and garlic; cook 3-4 minutes. Stir in spices and seasonings.
  • Add sweet potatoes back to the skillet, toss to coat, and cook 2-3 minutes.
  • Make 4 wells, crack eggs into each, cover, and cook 3-5 minutes until eggs are done to your liking. Garnish with herbs and serve with optional toppings.

Notes

For a spicier hash, add more cayenne or hot sauce.
