Superfood Granola Bars

Delicious and nutritious homemade granola bars packed with superfoods and dark chocolate chips.

Ingredients

Dried Fruits

  • 2 cups medjool dates (pits removed)

Dry Ingredients

  • 1 cup gluten-free rolled oats
  • 0.5 cup toasted almonds, chopped
  • 0.25 cup pumpkin seeds
  • 0.25 cup sunflower seeds
  • 2 tbsp sesame seeds
  • 2 tbsp flax seeds
  • 3 tbsp hemp seeds
  • 1 tbsp chia seeds
  • 0.25 cup shredded unsweetened coconut
  • 1 tsp cinnamon
  • 0.25 tsp salt
  • 0.33 cup almond butter (the runny kind is best)

Chocolate

  • handful dark chocolate chips or chunks (70% dark chocolate)

Instructions 

  • Puree the medjool dates in a food processor to make a date paste.
  • Mix all dry ingredients in a large bowl, then add the date paste and almond butter. Mix until combined.
  • Stir in the chocolate chips.
  • Line an 8x8 inch pan with parchment, press mixture evenly into the pan, and refrigerate for 4 hours to set.
  • Remove from fridge and cut into bars or squares. Store in the fridge.

Notes

Press mixture firmly into the pan for even bars and refrigerate to set properly.
