A vibrant and fresh shrimp bowl featuring flavorful rice, mango salsa, and black beans, perfect for a light summer meal.

Ingredients

Grains

  • 1 cup long grain basmati rice

Oils & Seasonings

  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp paprika
  • 0.5 tsp garlic powder
  • 0.25 tsp onion powder
  • 0.25 tsp black pepper
  • 0.25 tsp sea salt
  • dash cayenne

Shrimp & Vegetables

  • 12-15 shrimp shrimp (peeled and deveined)
  • 1 mango mango
  • 1 avocado avocado
  • 0.25 cup tomatoes
  • 0.25 cup red onion
  • 0.5 cup cilantro
  • 1 lime lime, juiced
  • 0.5 lime lime zest
  • 2 tbsp grated cotija cheese

Seasonings for Shrimp

  • 1 tsp chili powder (for shrimp)
  • 1 tsp paprika (for shrimp)
  • 0.5 tsp garlic powder (for shrimp)
  • 0.25 tsp onion powder (for shrimp)
  • 0.25 tsp black pepper (for shrimp)
  • 0.25 tsp sea salt (for shrimp)

Instructions 

  • Cook rice by boiling with salt and 1 tbsp olive oil, then simmer for 7-9 minutes until liquid is absorbed.
  • Prepare mango salsa by combining mango, avocado, red onion, cilantro, tomatoes, lime juice, and lime zest. Set aside.
  • Season shrimp with spices and cook in a pan with olive oil for 6-8 minutes until fully cooked. Set aside.
  • Mix cooked rice with chopped cilantro, lime juice, salt, and garlic powder to make cilantro lime rice.
  • Assemble bowls with cilantro lime rice, black beans, pico de gallo, mango salsa, shrimp, and top with cotija cheese. Drizzle with dressing.
