Ingredients
Vegetables and grains

zucchini
(Halved and scooped)

quinoa or rice
(Uncooked, makes about 3 cups cooked)

bell pepper
(Diced, any color)

cup
corn
(Cooked, fresh, frozen, or canned and drained)

black beans
(15 oz, rinsed and drained)

salsa
(Mild, medium, or hot)

teaspoon
ground cumin

teaspoon
chili powder
to taste
Salt and freshly ground black pepper

shredded cheese
(Optional, cheddar, Monterey Jack, or pepper jack)
to taste
Fresh cilantro
(For garnish)
Instructions
Preheat oven to 375°F (190°C).
Cook quinoa or rice according to package instructions.
Mix cooked grains with diced bell pepper, corn, black beans, salsa, cumin, chili powder, salt, and pepper.
Scoop mixture into halved zucchinis and top with shredded cheese.
Bake for 25-30 minutes until zucchinis are tender and cheese is melted. Garnish with cilantro before serving.
Notes
You can customize the filling with your favorite vegetables or add cooked ground meat for extra protein.
