Preheat oven to 350°F. Line a 9x9 inch pan with parchment and spray with nonstick spray.
Mix almond flour, oat flour, oats, and salt. Add melted butter, maple syrup, and vanilla; combine. Reserve 1 cup for topping. Press remaining dough into pan.
Bake crust for 10 minutes. Meanwhile, prepare filling: simmer strawberries, maple syrup, cornstarch, lemon juice, and almond extract until thickened.
Pour filling over crust, top with reserved crumble, and bake for 35-45 minutes until golden and bubbly. Cool before slicing.
Notes
Chill bars in the fridge for easier slicing. Serve with vanilla ice cream for extra indulgence.
