Strawberry Crumble Bars

Deliciously sweet and crunchy strawberry crumble bars perfect for a quick dessert or snack.

Ingredients

For the crust

  • 1 ½ cups cups packed fine almond flour (do not use almond meal)
  • 1 ½ cups cups oat flour
  • ¾ cup cups oats
  • ½ teaspoon teaspoon salt
  • ½ cup cups melted and cooled salted butter (or sub vegan butter or melted coconut oil)
  • ⅓ cup cups pure maple syrup
  • ½ teaspoon teaspoon vanilla extract

For the filling

  • 1 pound g fresh strawberries, diced
  • 3 tablespoons tablespoons pure maple syrup
  • 1 tablespoon tablespoon cornstarch (or arrowroot starch)
  • 1 teaspoon teaspoon lemon juice
  • ¼ teaspoon teaspoon almond extract (or sub vanilla)

Instructions 

  • Preheat oven to 350°F. Line a 9x9 inch pan with parchment and spray with nonstick spray.
  • Mix almond flour, oat flour, oats, and salt. Add melted butter, maple syrup, and vanilla; combine. Reserve 1 cup for topping. Press remaining dough into pan.
  • Bake crust for 10 minutes. Meanwhile, prepare filling: simmer strawberries, maple syrup, cornstarch, lemon juice, and almond extract until thickened.
  • Pour filling over crust, top with reserved crumble, and bake for 35-45 minutes until golden and bubbly. Cool before slicing.

Notes

Chill bars in the fridge for easier slicing. Serve with vanilla ice cream for extra indulgence.
