A delicious and fruity cake combining fresh strawberries and blueberries, perfect for a summer dessert or special occasion.

Ingredients

Dry ingredients

  • 2 cups all-purpose flour (sifted or aerated)
  • 2 teaspoons baking powder

Wet ingredients

  • 1 1/4 cups white granulated sugar
  • 2 oz salted butter (melted)
  • 2 eggs eggs
  • 1 cup plain low-fat Greek yogurt
  • 1 teaspoon pure vanilla extract

Fruits

  • 16 oz fresh strawberries (hulled and halved)
  • 6 oz fresh blueberries

Instructions 

  • Preheat oven to 350°F (175°C). Line a 9x3-inch springform pan with parchment and grease it.
  • Mix flour and baking powder. In a separate bowl, beat sugar, melted butter, and eggs until smooth. Add yogurt and vanilla, then combine with dry ingredients.
  • Fold in chopped strawberries. Pour batter into the pan, then arrange halved strawberries and blueberries on top.
  • Bake for 50-60 minutes until a toothpick inserted in the center comes out clean. Cool in the pan, then release and transfer to a plate.
  • Dust with powdered sugar and serve with whipped cream or ice cream if desired.

Notes

Use fresh, ripe berries for best flavor. Do not over-mix the batter to keep the cake light and fluffy.
