Ingredients

Meat

  • 1.5 lbs flank steak, sliced into thin strips

Grains

  • 2 cups long-grain white rice, cooked

Canned Goods

  • 1 can (15 oz) black beans, rinsed and drained

Vegetables

  • 1 cup frozen corn, charred in a skillet

Oils & Condiments

  • 2 tablespoons olive oil

Spices & Herbs

  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 0.5 teaspoon kosher salt

Fresh Herbs & Fruits

  • 0.25 cup fresh cilantro, chopped
  • 2 tablespoons lime juice

Produce

  • 1 large avocado, sliced

Toppings

  • 0.5 cup pico de gallo

Instructions 

  • Combine cumin, chili powder, garlic powder, and salt; rub over steak.
  • Heat olive oil and sear steak 3-4 minutes until browned.
  • Mix cilantro and lime juice into cooked rice.
  • Divide rice into four containers; top with steak, beans, and corn.
  • Garnish with avocado slices and pico de gallo before serving.

Notes
