A quick and nutritious omelette packed with earthy mushrooms and vibrant spinach, perfect for a wholesome breakfast or light meal.
Ingredients
Vegetables

mushrooms cremini or button mushrooms, sliced

cup
fresh spinach, roughly chopped, excess moisture squeezed out

eggs, fresh and at room temperature

tablespoon
olive oil, good quality, for sautéing
to taste
salt and pepper, season generously

tablespoon
cheddar or feta cheese, optional for extra creaminess
a few
tablespoons
fresh herbs, parsley, chopped, for garnish
Instructions
Heat a non-stick skillet over medium heat and add olive oil. Add mushrooms and cook until golden, about 3-4 minutes.
Add spinach to the skillet and cook until wilted, about 1-2 minutes. Remove from heat.
Whisk eggs in a bowl, season with salt and pepper. Pour over vegetables in the skillet and cook on low until edges set, about 2-3 minutes.
If using cheese, sprinkle over half the omelette, fold, and cook for another 30 seconds.
Slide omelette onto a plate, garnish with herbs, and serve.
Notes
Use fresh eggs for best results and feel free to customize with your favorite herbs.
