A quick and nutritious omelette packed with earthy mushrooms and vibrant spinach, perfect for a wholesome breakfast or light meal.

Ingredients

Vegetables

  • 0.5 cup mushrooms cremini or button mushrooms, sliced
  • 1 cup fresh spinach, roughly chopped, excess moisture squeezed out
  • 3 large eggs, fresh and at room temperature
  • 1 tablespoon olive oil, good quality, for sautéing
  • to taste salt and pepper, season generously
  • 1 tablespoon cheddar or feta cheese, optional for extra creaminess
  • a few tablespoons fresh herbs, parsley, chopped, for garnish

Instructions 

  • Heat a non-stick skillet over medium heat and add olive oil. Add mushrooms and cook until golden, about 3-4 minutes.
  • Add spinach to the skillet and cook until wilted, about 1-2 minutes. Remove from heat.
  • Whisk eggs in a bowl, season with salt and pepper. Pour over vegetables in the skillet and cook on low until edges set, about 2-3 minutes.
  • If using cheese, sprinkle over half the omelette, fold, and cook for another 30 seconds.
  • Slide omelette onto a plate, garnish with herbs, and serve.

Notes

Use fresh eggs for best results and feel free to customize with your favorite herbs.
