Ingredients

Eggs

  • 6 large eggs

Cottage Cheese

  • 1 cup full-fat cottage cheese

Spinach

  • 1.5 cups fresh spinach ((or 3/4 cup frozen, thawed and drained))

Chopped scallions or onions

Instructions 

  • Preheat oven to 375°F (190°C) and grease an 8×8-inch baking dish.
  • Whisk eggs and cottage cheese until combined.
  • Fold in spinach and optional ingredients; season with salt and pepper.
  • Pour into the baking dish and spread evenly.
  • Bake for 30–35 minutes until set and golden. Cool for 10 minutes before slicing.
