whole wheat or spinach wraps

fresh spinach

onion
(Finely chopped)

garlic

Instructions
Finely chop onion and mince garlic; wash spinach thoroughly.
Sauté onion in olive oil until translucent, then add garlic and cook briefly. Add spinach and cook until wilted.
Whisk eggs with salt, pepper, and optional spices. Pour into skillet with spinach mixture and scramble until just set.
Warm the wraps briefly in a skillet or microwave. Divide the egg and spinach mixture onto each wrap, sprinkle with cheese, then fold and roll.
Optional: Grill or pan-fry the wraps for 1-2 minutes per side until crispy. Serve immediately.
Notes
Warming the wraps makes them more pliable and enhances flavor. Feel free to customize with your favorite spices or cheese.
