Ingredients

Protein

  • 1 lb boneless skinless chicken breast, cut into 1-inch cubes

Noodles

  • 8 oz dried rice noodles or udon

Vegetables

  • 3 cups fresh broccoli florets

Aromatics

  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated

Sauces & Oils

  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons chili garlic sauce
  • 1 tablespoon honey
  • 1 tablespoon toasted sesame oil
  • 2 tablespoons vegetable oil

Garnishes

  • 2 green onions thinly sliced
  • 1 tablespoon toasted sesame seeds

Instructions 

  • Cook noodles according to package instructions, then drain and set aside.
  • Mix soy sauce, chili garlic sauce, honey, and sesame oil to make the glaze.
  • Heat vegetable oil in a skillet, cook chicken until browned, then add garlic and ginger, cooking 1 minute.
  • Add broccoli with water, cover to steam for 2-3 minutes, then stir in glaze and cook 1 minute.
  • Add noodles, toss to coat, then garnish with green onions and sesame seeds before serving.

Notes

For extra spice, add more chili garlic sauce or red pepper flakes.
