Ingredients

Protein

  • 2 large chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste Salt and pepper
  • 0.25 cup buffalo sauce
  • 4 large lettuce leaves (romaine or iceberg)
  • 0.5 cup Caesar dressing (preferably homemade or healthier version)
  • 0.25 cup shredded Parmesan cheese
  • 0.25 cup diced celery
  • 0.25 cup diced red onion
  • 1 tablespoon fresh chopped parsley

Instructions 

  • Preheat oven to 375°F (190°C). Rub chicken with olive oil, salt, and pepper; bake for 20-25 minutes until cooked through. Shred chicken and toss with buffalo sauce.
  • Wash and dry lettuce leaves; set aside. Mix Caesar dressing, shredded chicken, celery, red onion, and Parmesan in a large bowl.
  • Place the chicken mixture onto lettuce leaves, top with parsley, roll up tightly, and serve immediately.

Notes

For a healthier dressing, use a low-fat or homemade Caesar dressing.
