A hearty and flavorful lentil soup seasoned with warming spices, perfect for a comforting meal.

Ingredients

olive oil

  • 1 tablespoon olive oil

vegetable ingredients

  • 1 diced onion
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh ginger (grated)
  • 2 carrots carrots (chopped)
  • 1 cup dried lentils (red or brown, rinsed)

spices

  • 1 teaspoon ground turmeric
  • 0.5 teaspoon cumin
  • 0.5 teaspoon paprika

seasoning

  • to taste salt and pepper
  • 4 cups vegetable broth
  • 1/2 lemon lemon juice (from half a lemon)

garnish

  • optional chopped cilantro or parsley (for garnish)

Instructions 

  • Heat olive oil, sauté onion until translucent, then add garlic, ginger, carrots, and spices; cook briefly.
  • Add lentils and broth, bring to boil, then simmer for 25-30 minutes.
  • Use an immersion blender to partially blend the soup, season with salt, pepper, and lemon juice.
  • Ladle into bowls, garnish with herbs, and serve.
