1.75cupsgranulated sugar (3/4 cup for custard, 1 cup for caramel)
2.5tspvanilla extract (2 tsp for custard, 1/2 tsp for caramel)
4tbspunsalted butter for caramel

Instructions
Butter a 9x13-inch dish, cube brioche, and let dry. Sauté apples with butter, sugar, spices, and salt; stir in raisins.
Whisk eggs, yolks, sugar, milk, cream, and vanilla to make custard. Spread bread in dish, add apples and raisins, pour custard, and rest 20–30 minutes.
Bake at 350°F (175°C) for 40–50 minutes until puffed and golden. Cool slightly. Prepare caramel by cooking sugar and water to deep amber, then whisk in butter, cream, vanilla, and salt.
Serve bread pudding warm with generous caramel sauce.
Notes
For best results, let the bread soak in the custard for at least 20 minutes before baking.
