A warm, spiced bread pudding with caramel sauce, perfect for cozy gatherings and dessert indulgence.

Ingredients

Bread

  • 10 cups brioche, cut in 1-inch cubes (about 1 large loaf (14–16 oz))
  • 3 medium apples, peeled and diced (about 3 cups)
  • 3 tbsp unsalted butter (for apples)
  • 0.33 cup light or dark brown sugar
  • 0.75 cup raisins
  • 2 tsp ground cinnamon
  • 0.25 tsp nutmeg
  • 0.25 tsp allspice
  • 0.5 tsp salt
  • 4 large eggs
  • 2 large egg yolks
  • 2.5 cups whole milk
  • 1 cup heavy cream (plus 1/2 cup for caramel)
  • 1.75 cups granulated sugar (3/4 cup for custard, 1 cup for caramel)
  • 2.5 tsp vanilla extract (2 tsp for custard, 1/2 tsp for caramel)
  • 4 tbsp unsalted butter for caramel
  • 0.25 cup water

Instructions 

  • Butter a 9x13-inch dish, cube brioche, and let dry. Sauté apples with butter, sugar, spices, and salt; stir in raisins.
  • Whisk eggs, yolks, sugar, milk, cream, and vanilla to make custard. Spread bread in dish, add apples and raisins, pour custard, and rest 20–30 minutes.
  • Bake at 350°F (175°C) for 40–50 minutes until puffed and golden. Cool slightly. Prepare caramel by cooking sugar and water to deep amber, then whisk in butter, cream, vanilla, and salt.
  • Serve bread pudding warm with generous caramel sauce.

Notes

For best results, let the bread soak in the custard for at least 20 minutes before baking.
