Ingredients

Protein

  • 2 large chicken breasts
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 0.5 tsp cumin
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Grains & Legumes

  • 2 cups cooked rice (white or brown)
  • 1 cup black beans (rinsed and drained)
  • 1 cup corn kernels (grilled or canned)

Vegetables & Fruits

  • 1 cup cherry tomatoes (halved)
  • 1 avocado avocado (sliced)
  • 0.25 cup red onion (finely diced)

Garnishes & Sides

  • fresh cilantro (for garnish)
  • lime wedges (for serving)

Instructions 

  • Whisk olive oil, lime juice, and spices to make marinade.
  • Marinate chicken for 15–120 minutes, then grill or pan-fry 5–6 minutes per side until cooked. Rest and slice.
  • Prepare rice and toppings while chicken cooks.
  • Assemble bowls with rice, beans, corn, tomatoes, avocado, and sliced chicken.
  • Top with cilantro and serve with lime wedges.
