Instructions
Heat olive oil in a skillet, cook diced chicken until browned, then set aside.
Sauté onion and bell pepper, add garlic, chipotle, adobo sauce, and paprika; cook until fragrant.
Add rice, toast for 1–2 minutes, then pour in broth and BBQ sauce. Return chicken, bring to boil, then simmer covered for 20–25 minutes.
Sprinkle cheese over rice, cover until melted, then garnish with green onions or cilantro.
Notes
For extra flavor, let the dish rest for 5 minutes before serving.
