A hearty and flavorful beef stew perfect for summer, cooked slowly to tender perfection with fresh vegetables and herbs.

Ingredients

Main Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 1/4-1/2 pounds stew beef (cut into chunks)
  • 2 tablespoons flour (see note)

  • 2-3 cloves garlic (minced)
  • 1 bay leaf bay leaf
  • 1 shallot shallot (thinly sliced)
  • 2 tablespoons tomato paste
  • 2 cups beef broth
  • 2 small zucchini (chopped)
  • 1 yellow yellow bell pepper (chopped)
  • 1 red red bell pepper (chopped)

Garnishes

Instructions 

  • Heat olive oil in a large pot over medium-high heat. Toss beef with flour, salt, and pepper; brown on all sides, about 5-7 minutes.
  • Transfer beef and juices to the slow cooker. Add garlic, bay leaf, shallots, tomato paste, and broth; stir to combine. Cook on low for 6 hours.
  • About 30 minutes before the end, add zucchini and peppers; stir gently and continue cooking with lid on for remaining 30 minutes.
  • Serve hot, garnished with basil and parmesan cheese, with your choice of grains.

Notes

For a thicker stew, add a slurry of flour and water at the end.
