A hearty and flavorful beef stew perfect for summer, cooked slowly to tender perfection with fresh vegetables and herbs.

Instructions
Heat olive oil in a large pot over medium-high heat. Toss beef with flour, salt, and pepper; brown on all sides, about 5-7 minutes.
Transfer beef and juices to the slow cooker. Add garlic, bay leaf, shallots, tomato paste, and broth; stir to combine. Cook on low for 6 hours.
About 30 minutes before the end, add zucchini and peppers; stir gently and continue cooking with lid on for remaining 30 minutes.
Serve hot, garnished with basil and parmesan cheese, with your choice of grains.
Notes
For a thicker stew, add a slurry of flour and water at the end.
