A hearty and creamy beef stroganoff cooked slowly to tender perfection, served over noodles for a comforting meal.

Ingredients

Seasoning

  • 1 tablespoon all purpose flour (or gluten-free flour)
  • 2.5 teaspoons kosher salt (divided)
  • to taste black pepper

Main ingredients

  • 2 pounds beef chuck roast (well trimmed and cut into chunks)
  • 1 teaspoon olive oil
  • 1 medium onion (chopped)
  • 1 pound mushrooms (sliced)
  • 1 teaspoon sweet paprika
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce (check labels for gluten-free)
  • ¾ cup sour cream
  • 1 pound egg noodles

Instructions 

  • Season beef with 1 ½ teaspoons salt, black pepper, and flour.
  • Saute onions in olive oil until softened, then transfer to slow cooker. Brown beef in skillet and add to cooker.
  • Add paprika, beef broth, remaining salt, Worcestershire sauce, top with mushrooms, and cook on HIGH for 5 hours.
  • Stir in sour cream 30 minutes before serving. Cook noodles and serve stroganoff over noodles.

Notes

For a gluten-free version, use gluten-free flour and check Worcestershire sauce labels.
