Ingredients

Protein

  • 1 pound shrimp, peeled and deveined

Fruits

  • 1 cup pineapple chunks (fresh or canned)

Vegetables

  • 2 cups mixed vegetables (bell peppers, snap peas, carrots)

Other

  • 1 tablespoon vegetable oil
  • 3 tablespoons teriyaki sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated

Instructions 

  • Heat oil in a large skillet over medium-high heat.
  • Add garlic and ginger, stir-fry until fragrant.
  • Add shrimp and cook until pink, about 3-4 minutes.
  • Add vegetables and pineapple, stir-fry until tender yet crisp.
  • Stir in teriyaki sauce and cook for another minute. Season with salt and pepper, then serve over rice or noodles.
