Delight in these easy, fluffy vanilla muffins made with simple ingredients and a vegan twist.

Ingredients

Wet Ingredients

  • 1/2 cup oat milk (Unsweetened - 120 ml)
  • 1/2 teaspoon apple cider vinegar
  • 1/4 cup melted vegan butter (measure then melt - 57 grams)
  • 1/3 cup unsweetened natural apple sauce (78 grams)
  • 1/2 cup vegan cane sugar (plus extra to sprinkle on top - 100 grams)
  • 2 teaspoons vanilla extract (3-4 teaspoons for more vanilla flavor)

Dry Ingredients

  • 1 1/2 cups all purpose unbleached flour (188 grams)
  • 2 teaspoons baking powder
  • pinch salt salt

Instructions 

  • Combine oat milk and vinegar; set aside for 5 minutes.
  • Mix wet ingredients: oat milk mixture, melted butter, apple sauce, sugar, and vanilla.
  • Fold in dry ingredients: flour, baking powder, salt; do not overmix.
  • Divide batter into 7 greased muffin tins; sprinkle with sugar if desired.
  • Bake at 375°F (190°C) for 22 minutes until golden.

Notes

For extra vanilla flavor, add an additional teaspoon of vanilla extract.
