Delight in these easy, fluffy vanilla muffins made with simple ingredients and a vegan twist.

Wet Ingredients

oat milk
(Unsweetened - 120 ml)

apple cider vinegar

melted vegan butter
(measure then melt - 57 grams)

unsweetened natural apple sauce
(78 grams)

vegan cane sugar
(plus extra to sprinkle on top - 100 grams)

(3-4 teaspoons for more vanilla flavor)
Dry Ingredients

Instructions
Combine oat milk and vinegar; set aside for 5 minutes.
Mix wet ingredients: oat milk mixture, melted butter, apple sauce, sugar, and vanilla.
Fold in dry ingredients: flour, baking powder, salt; do not overmix.
Divide batter into 7 greased muffin tins; sprinkle with sugar if desired.
Bake at 375°F (190°C) for 22 minutes until golden.
Notes
For extra vanilla flavor, add an additional teaspoon of vanilla extract.
