A moist and flavorful citrus cake featuring the vibrant taste of fresh oranges, perfect for any occasion.

Ingredients

  • 1 large navel orange (washed thoroughly)
  • 6 large eggs
  • 1 cup granulated sugar
  • 2 cups almond flour (or almond meal)
  • 1 tsp baking powder
  • 0.25 tsp salt
  • 0.25 cup olive oil (extra virgin)
  • 1 tsp vanilla extract
  • 1 orange additional orange (zest optional)
  • 1.5 cups powdered sugar
  • 3-4 tbsp orange juice (fresh)
  • 1 tbsp orange zest
  • 1 tbsp butter (melted)
  • Pinch salt

Optional Garnishes

  • to taste candied orange slices
  • to taste fresh orange zest
  • to taste sliced almonds (toasted)

Instructions 

  • Boil the orange for 1 hour, then cool, chop with peel on, and process until finely minced.
  • Preheat oven to 350°F (175°C). Grease a 9-inch springform pan and line with parchment, dust with almond flour.
  • Beat eggs and sugar until pale, then add olive oil, vanilla, and processed orange. Mix well.
  • Whisk dry ingredients and fold into wet mixture. Pour into pan and bake for 45-50 minutes.
  • Cool, then prepare glaze by mixing powdered sugar, orange juice, zest, melted butter, and salt. Drizzle over cake and garnish as desired.

Notes

For extra citrus flavor, add orange zest to the batter or garnish with candied orange slices.
